Ingredients
Chocolate Pudding Layer
- 1 (5.9-ounce) box instant chocolate pudding
- 2 ½ cups whole milk
- ½ cup Cool Whip, defrosted
- 6 graham crackers, broken in half (half of 12 crackers)
Cream Cheese Marshmallow Layer
- 5 ounces cream cheese, at room temperature
- 7 ounces marshmallow creme
- 2 cups Cool Whip, defrosted
- Pinch of salt
- 6 graham crackers, broken in half (remaining half)
Instructions
- Prepare the Baking Dish: Line a 9×13-inch baking dish with parchment paper, letting extra parchment hang over the sides to easily lift out the frozen dessert later.
- Make Chocolate Pudding Layer: In a medium bowl, whisk together the instant chocolate pudding mix, whole milk, and ½ cup Cool Whip until the mixture is smooth and creamy.
- Layer First Graham Crackers and Pudding: Arrange half of the broken graham crackers evenly at the bottom of the lined baking dish. Spread the prepared chocolate pudding mixture evenly over the graham crackers. Chill this layer while preparing the next.
- Prepare Cream Cheese Marshmallow Mixture: In another medium bowl, beat the cream cheese and marshmallow creme together until smooth. Gently fold in the remaining 2 cups of Cool Whip and a pinch of salt until well combined.
- Add Cream Cheese Layer and Top with Graham Crackers: Spread the cream cheese and marshmallow mixture evenly over the chilled chocolate pudding layer. Place the remaining graham crackers on top to finish the layered dessert. Cover the dish with foil.
- Freeze the Dessert: Freeze the layered dessert for at least 6 hours or until firm enough to cut cleanly.
- Serve: Use the parchment overhang to lift the frozen dessert out of the pan. On a cutting board, slice into 12 squares using the graham crackers as a guide. Trim any excess frozen filling. Serve immediately softened or store wrapped in a freezer bag for up to 2 months. Allow frozen s’mores to soften at room temperature for 15 minutes before eating.
Notes
- Easy protein frozen s’mores variation: Use 5 graham crackers in a 9×9-inch pan, melt ½ cup semi-sweet chocolate chips with 1 teaspoon coconut oil and spread over grahams; freeze 5 minutes to harden. Mix 1 scoop vanilla protein powder into Cool Whip or coconut whip and spread on top. Add more grahams and freeze overnight.
- Storage: Wrap each s’more sandwich individually with plastic wrap and store in an airtight freezer container for up to 2 months.
