These Fluffy Belgian Waffles are crispy on the outside, tender on the inside, and easy to make with just a few simple ingredients. Perfect for breakfast or brunch!
Ingredients
2 cups all-purpose flour
4 tablespoons granulated sugar
4 teaspoons baking powder
½ teaspoon salt
2 eggs
1½ cups milk (2%)
6 tablespoons unsalted butter, melted
1 teaspoon vanilla bean paste (or vanilla extract)
Instructions
- Preheat your waffle iron and spray it with non-stick cooking spray.
- In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Create a well in the center.
- In a separate bowl, whisk together eggs, milk, melted butter, and vanilla bean paste (or extract).
- Pour the wet ingredients into the well of the dry ingredients and stir until just blended. Avoid overmixing.
- Scoop the batter into the preheated waffle iron, close it, and cook until golden brown and slightly crispy.
- Repeat the process with the remaining batter.
- Serve immediately, or store in the fridge or freezer for later use.
Notes
For chocolate chip waffles, add chocolate chips to the batter before cooking.
For whole wheat waffles, substitute half of the all-purpose flour with whole wheat flour.
A pinch of cinnamon or pumpkin spice can be added for a seasonal twist.
To make savory waffles, add grated cheese and fresh herbs to the batter and serve with eggs and bacon.
Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.
