  • 2/3 cup powdered sugar
  • 3.4-oz box instant pistachio pudding mix
  • 1/4 tsp almond extract
  • 5 cups rice Chex cereal

Wet Ingredients

  • 2 cups white chocolate melting wafers
  • 1/4 cup butter, cut into pieces


Instructions

  1. Prepare Cereal: Place the rice Chex cereal in a large mixing bowl and set it aside. Line a work surface or baking sheet with parchment or wax paper to prepare for cooling the coated cereal.
  2. Mix Sugar and Pudding: In a gallon-size zip-top bag, combine the powdered sugar and dry pistachio pudding mix. Seal the bag and shake well to mix both powders evenly.
  3. Add Almond Extract: Add the 1/4 teaspoon of almond extract to the sugar and pudding mixture in the bag. Seal and shake again to incorporate the extract thoroughly into the dry mixture.
  4. Melt Chocolate and Butter: In a medium microwave-safe bowl, combine the white chocolate melting wafers and butter. Microwave for 30 seconds, then stir. Continue microwaving in 15-second increments, stirring after each, until the mixture is melted smoothly without overheating or seizing.
  5. Coat Cereal: Pour the melted white chocolate and butter mixture over the rice Chex cereal. Gently stir the cereal to coat it evenly and quickly before the chocolate hardens.
  6. Sugar Coating: Transfer the chocolate-coated cereal into the zip-top bag with the powdered sugar and pistachio pudding mix. Seal the bag tightly and shake well, ensuring that every piece of cereal is coated with the sugar mixture.

Notes

  • White chocolate chips can sometimes seize when heated. To avoid this, use high-quality white chocolate melting wafers and heat in short increments, stirring frequently. Ghirardelli melting wafers are recommended for best results.
  • If you prefer, vanilla almond bark can be used instead of white chocolate melting wafers for the coating.
