Ingredients
For the Beef Filling
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon smoked paprika
- Salt and black pepper, to taste
For the Cheese
- ½ cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
For the Rollups
- 4 large flour tortillas
For the Garlic Butter
- ¼ cup butter, melted
- 3 cloves garlic, minced
Optional for Serving
- Sliced pickles, for garnish
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking and set aside.
- Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked—about 7–8 minutes.
- Season the Beef: Add the Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper to the beef. Stir well to evenly disperse the seasonings, then remove from heat and allow the mixture to cool slightly so it can be handled safely.
- Prepare the Garlic Butter: In a small bowl, stir together the melted butter and minced garlic until well combined. Set aside for brushing the rollups.
- Assemble the Rollups: Lay each tortilla flat on a clean work surface. Evenly spoon the beef mixture across the tortillas, then sprinkle with both cheddar and mozzarella cheese.
- Roll and Bake: Roll each tortilla up tightly, tucking in the sides as you go to secure the filling. Place the rollups seam-side down on the prepared baking sheet and generously brush the tops with the garlic butter mixture. Bake for 12–15 minutes, or until the rollups are golden and crispy on the outside and the cheese inside is melted and bubbly.
- Serve: Let the rollups cool slightly before slicing them into pinwheels if desired. Garnish with sliced pickles and serve warm for the best experience.
Notes
- If you prefer, swap in ground turkey or chicken for a lighter option.
- For added crunch, sprinkle cooked bacon bits inside before rolling.
- Make these ahead: Assemble, wrap tightly, and refrigerate up to 6 hours before baking.
- To reheat, pop leftovers in a 350°F oven for 5–8 minutes to regain crispness.
