Description
This Easy Cottage Cheese Lemon Mousse is a light, refreshing dessert that combines creamy cottage cheese with zesty lemon juice and zest. Sweetened naturally with sugar-free maple syrup and stabilized with gelatin, it creates a smooth, fluffy mousse perfect for a healthy treat or a sophisticated dessert.
Ingredients
Gelatin Mixture
- 1/2 tbsp gelatin powder
- 3 tbsp water
Mousse
- 2 cups plain cottage cheese
- 2 tbsp lemon juice
- 2 tbsp grated lemon zest (freshly grated for best flavor)
- 1/4 cup sugar-free maple syrup (such as Lakanto)
- 1 tsp vanilla essence (optional, for added flavor depth)
Instructions
- Bloom the Gelatin: In a small bowl, combine 1/2 tablespoon of gelatin powder with 3 tablespoons of water. Stir until completely dissolved and set aside to bloom for about 5 minutes.
- Melt the Gelatin: Gently heat the bloomed gelatin in the microwave for 15-20 seconds or on the stove over low heat until liquefied, ensuring it does not boil.
- Blend the Ingredients: In a blender or food processor, combine 2 cups cottage cheese, 1/4 cup sugar-free maple syrup, 2 tablespoons lemon zest, 2 tablespoons lemon juice, the optional 1 teaspoon vanilla extract, and the melted gelatin mixture. Blend at high speed until smooth and creamy, which may take a few minutes depending on blender power.
- Adjust Flavor and Sweetness: Taste the mousse mixture and add more maple syrup or lemon juice if desired to adjust sweetness and tartness. Blend again briefly to incorporate any additions.
- Pour and Refrigerate: Transfer the mousse mixture into individual serving cups or bowls. Cover with plastic wrap or lids and refrigerate for 2 to 3 hours until firm and set.
- Garnish and Serve: Once set, garnish with fresh berries, whipped cream, or a sprig of mint before serving to enhance the presentation and flavor.
Notes
- Use freshly grated lemon zest for the best lemon flavor.
- Do not let the gelatin boil as it will lose its setting properties.
- For a dairy-free version, substitute cottage cheese with a soft tofu or cashew cream, though texture may vary.
- Sugar-free maple syrup keeps the dessert low in sugar and calories without sacrificing sweetness.
- Chilling time is crucial for the mousse to set properly.
