- 1 package (150g) Boursin herb and garlic cheese
- 2 pints cherry or grape tomatoes (about 4 cups, any color)
- 2 cloves garlic, chopped

- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- Freshly ground black pepper to taste
- Sprinkle of freshly grated Parmesan cheese (optional)
Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for roasting the tomatoes and cheese.
- Prepare Tomatoes and Cheese: In an 8×12-inch baking dish, combine the cherry tomatoes, olive oil, freshly ground black pepper, and salt. Make a well in the center of the tomatoes and place the entire package of Boursin Herb & Garlic cheese into this opening.
- Bake the Mixture: Place the baking dish in the preheated oven and bake for 30 minutes, allowing the tomatoes to soften and the cheese to melt into a creamy sauce.
- Cook the Pasta: While the tomato and cheese bake, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, then drain and set aside.
- Broil for Finish: After 30 minutes of baking, turn your oven’s broiler to high. Broil the tomato and cheese mixture for 2 minutes, or until the top is lightly golden browned, adding a nice roasted flavor.
- Combine Ingredients: Remove the baking dish from the oven. Stir in the chopped garlic, fresh parsley, and cooked pasta. Mix thoroughly to evenly coat the pasta with the creamy tomato and cheese sauce.
- Serve: Optionally, sprinkle freshly grated Parmesan cheese over the top before serving for added richness and flavor.
Notes
- This recipe can easily be doubled. Use a 9×13-inch baking dish and two packages of Boursin cheese, placing one well on opposite ends of the dish.
- Store any leftovers in an airtight container in the refrigerator for up to three to four days.
- Use any shape of pasta you prefer or have on hand; shells work especially well to hold the sauce.
- Adjust garlic amount to taste for a more or less intense flavor.
