Refreshing and light cucumber wraps filled with crisp romaine lettuce, grated Parmesan, and a creamy Green Goddess dressing blended with fresh herbs, perfect for a healthy lunch or snack.
Ingredients
For the Wraps
- 4 flour tortilla wraps
- 2 seedless cucumbers (or traditional cucumbers without seeds)
- Romaine lettuce, handfuls as needed
- Grated Parmesan cheese, about 2 tablespoons
- 2 oz cream cheese, softened
- Toothpicks, to secure wraps
For the Green Goddess Dressing
- 1/2 cup fresh basil leaves
- 1 clove garlic, grated
- 1/2 cup fresh parsley leaves
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 cup milk
- 1 cup plain Greek yogurt
- 1/2 cup diced scallions (include light green and white parts)
Instructions
- Prepare cucumbers: Peel both cucumbers and slice each completely lengthwise into halves. Then, slice each half lengthwise 4-5 times to create cucumber sticks. These sticks will be used as the main filling for each of the 4 wraps.
- Make Green Goddess dressing: Place fresh basil, grated garlic, parsley, lemon juice, salt, milk, Greek yogurt, and diced scallions into a food processor or blender. Blend until the mixture is completely smooth. Reserve some dressing for serving or salads later.
- Mix cream cheese with dressing: In a bowl, combine the softened cream cheese with about 1/3 cup plus 1 tablespoon of the prepared Green Goddess dressing. Stir thoroughly with a fork until smooth and creamy.
- Assemble the wraps: Lay one flour tortilla flat and spread a generous amount of the cream cheese and dressing mixture toward the center, leaving edges bare. Sprinkle about 1/2 tablespoon grated Parmesan cheese on the dressing. Add a handful of romaine lettuce, then lay one cucumber half (cut into sticks) on top. Roll the tortilla tightly, secure with 2 toothpicks, and slice the wrap in half. Repeat this step for the remaining wraps using all cucumber sticks.
Notes
- Using seedless cucumbers makes for less watery wraps, but traditional cucumbers can be used if preferred.
- The Green Goddess dressing can be stored in the refrigerator for several days and is excellent on salads or as a dip.
- Adjust the amount of Parmesan cheese to taste, adding more if you prefer a cheesier flavor.
- To keep wraps fresh and prevent sogginess, assemble them shortly before serving.
