Description

These Cucumber Tomato Bites are a fresh, crunchy, and easy-to-make appetizer perfect for parties, snacks, or light meals. Featuring creamy, tangy, and mildly spicy filling piped onto striped cucumber slices and topped with juicy cherry tomatoes, they come together quickly in just 20 minutes with minimal prep.


Ingredients

Filling

  • 6 ounces cream cheese, very softened
  • 3 tablespoons mayonnaise
  • 2 teaspoons hot sauce (adjust to taste)
  • 4 teaspoons dried dill, divided
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried parsley
  • ¼ teaspoon onion powder
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon salt

Vegetables

  • 2 medium-sized cucumbers (English or slicing cucumbers)
  • 12 cherry tomatoes, sliced in half lengthwise


Instructions

  1. Prepare Filling: In a bowl, combine the softened cream cheese, mayonnaise, hot sauce, 1 tablespoon of dried dill, garlic powder, dried parsley, onion powder, black pepper, and salt. Stir thoroughly until smooth. Cover and refrigerate the filling while you prepare the cucumbers.
  2. Peel and Slice Cucumbers: Peel the cucumbers, leaving alternating strips of skin on to create a striped appearance. Slice each cucumber into ½-inch thick rounds, yielding about 24 slices.
  3. Scoop Out Cucumber Seeds: Use a small spoon to carefully scoop out the seeds from the center of each cucumber slice, taking care not to scoop through the bottom. Pat the cucumber slices dry with paper towels to remove excess moisture.
  4. Pipe Filling onto Cucumber Slices: Remove the filling from the refrigerator and transfer it into a piping bag. Pipe approximately 1 to 2 teaspoons of filling onto each cucumber slice evenly.
  5. Garnish and Top: Sprinkle the remaining ½ teaspoon of dried dill over the filled cucumber slices. Top each with a halved cherry tomato, placing the cut side up for presentation.

Notes

  • Piping Bag Alternative: If you don’t have a piping bag, use a sandwich baggie by filling it with the mixture and snipping off a small corner to pipe.
  • Prep in Advance: You can prepare cucumbers and filling separately in advance and assemble just before serving to keep bites fresh and crisp. Fully assembled bites can be made a couple of hours ahead and remain fresh.
  • Storage: Store leftovers in a single layer in an airtight container in the refrigerator for up to 2 days.
