Description

Ingredients

Potatoes

  • 1 1/2 lbs Yukon gold potatoes, washed and diced into 1/2 inch cubes

Seasonings & Oil

  • 2 tablespoons olive oil
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the Air Fryer: Preheat your air fryer to 375°F for 5 minutes to ensure even cooking and crispy edges. Meanwhile, thoroughly wash and dry the potatoes.
  2. Prepare the Potatoes: Dice the Yukon gold potatoes into 1/2 inch cubes for even cooking. Dry them again with a towel if needed to remove excess moisture.
  3. Season the Potatoes: Place the diced potatoes in a large bowl. Add olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss everything well until the potatoes are evenly coated with seasoning and oil.
  4. Air Fry the Potatoes: Arrange the seasoned potatoes in a single, even layer in the air fryer basket. Avoid overcrowding for maximum crispiness; cook in batches if needed. Air fry for 20 minutes, shaking or tossing the basket 2-3 times during cooking to ensure even browning.
  5. Optional Extra Crisp: For extra crispy edges, use your air fryer’s broil function and broil the potatoes for 2-3 minutes at the end, shaking the basket as needed to prevent burning. If your air fryer doesn’t have this function, increase the temperature to 450°F and broil until golden and crispy.
  6. Serve: Transfer the crispy breakfast potatoes to a serving dish and top with fresh chopped parsley if desired. Enjoy hot as a perfect side for breakfast or brunch!
