- 50g parmesan, shredded (around ½ cup)
- 2 stalks parsley, chopped
- Black pepper to taste
- Pasta water (reserved from cooking)

Instructions
- Cook the pasta: Bring a large pot of lightly salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve about ½ cup of the pasta cooking water, then strain the pasta and set aside.
- Sauté mushrooms: In a large pan, heat the olive oil over medium heat. Add the sliced mushrooms and cook, stirring occasionally, until they are golden brown and have released their moisture, about 5-7 minutes.
- Add shallots and garlic: Add the finely minced shallots and garlic to the pan with the mushrooms. Sauté until the shallots become translucent and fragrant, about 2-3 minutes.
- Create the sauce: Push the mushroom mixture to one side of the pan. On the empty side, add the butter, miso paste, and cream. Stir continuously until the miso is fully dissolved and the sauce is smooth and combined.
- Combine pasta and sauce: Add the cooked pasta into the pan and toss to coat evenly with the miso cream sauce and mushrooms. Gradually drizzle in some reserved pasta water to loosen the sauce to your preferred consistency.
- Finish with cheese and herbs: Sprinkle in the shredded parmesan cheese and chopped parsley. Season generously with freshly ground black pepper and toss well to combine all flavors throughout the dish.
- Serve and garnish: Plate the pasta and garnish with extra parmesan, more chopped parsley, and a drizzle of chili oil if desired for a spicy kick.
