  • 2 pack frozen udon noodles

Sauce

  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 shallots, chopped
  • 1 1/2 tbsp gochujang
  • 1/2 cup heavy cream
  • 1/2 cup reserved noodle water
  • 2 tsp soy sauce
  • 1 tsp gochugaru

Garnishes

  • 1 green onion, chopped
  • Grated parmesan cheese
  • 1 egg yolk (optional)


Instructions

  1. Cook the noodles: Bring a pot of water to a boil and cook the frozen udon noodles according to the package instructions. Reserve 1/2 cup of the noodle water before draining. Rinse the noodles under cold water to stop cooking and set aside.
  2. Prepare the sauce base: In a pan over medium heat, melt the unsalted butter. Add the minced garlic and chopped shallots, sautéing them until fragrant and translucent to build the flavor foundation of the sauce.
  3. Incorporate gochujang: Add 1 1/2 tablespoons of gochujang to the pan and cook for about 30 seconds. This step helps to release the flavors of the spicy Korean chili paste.
  4. Add liquids and season: Slowly pour in the heavy cream and the reserved 1/2 cup noodle water. Then add 2 teaspoons soy sauce and 1 teaspoon gochugaru (Korean chili flakes). Stir the sauce well and bring it to a gentle simmer, allowing it to thicken slightly for a creamy consistency.
  5. Toss noodles in sauce: Add the cooked udon noodles into the pan with the sauce. Toss thoroughly to ensure every noodle is evenly coated with the creamy gochujang sauce.
