Instructions

  1. Sauté Vegetables: In a large pot, melt butter or heat oil over medium heat. Add the diced onion and finely chopped celery, cooking until they have softened and become translucent, about 5 minutes.
  2. Cook Mushrooms: Add the thinly sliced mushrooms to the pot and cook until they are golden brown and have released their moisture, about 7-8 minutes, stirring occasionally to prevent sticking.
  3. Add Aromatics and Herbs: Stir in the crushed garlic cloves and fresh thyme. Cook them for 1-2 minutes to allow the flavors to bloom and become fragrant.
  4. Add Liquids: Pour in the 6 cups of stock followed by 1 cup of cream. Stir well and bring the soup to a gentle simmer. Let it cook uncovered for 5 minutes to meld the flavors and slightly thicken the soup.
  5. Add Chicken and Spinach: Stir in the shredded rotisserie chicken, chopped spinach, and a pinch of chili flakes. Allow the soup to simmer for an additional 5 minutes until the spinach has wilted and the chicken is heated through. Season with salt and pepper to taste.
