Description

Cloud Bread is a light, airy, and fluffy low-carb bread alternative made primarily from egg whites and a few simple ingredients. It has a delicate texture reminiscent of a soft meringue and is perfect for gluten-free, low-carb, or keto-friendly diets. This recipe yields soft, slightly sweet, and subtly flavored domes of bread that are best enjoyed fresh right out of the oven.

  • 4 large Egg Whites
  • ⅓ cup Granulated Sugar
  • 1½ tablespoons Cornstarch
  • 1 teaspoon Vanilla Extract (optional)
  • A few drops of Food Coloring (optional)


Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Whisk Egg Whites: In a clean bowl, vigorously whisk the 4 egg whites until they become frothy and bubbly, forming soft peaks.
  3. Add Ingredients and Whisk to Stiff Peaks: Add the granulated sugar, cornstarch, and vanilla extract (if using) to the frothy egg whites. Continue whisking until stiff peaks form. If desired, add a few drops of food coloring and gently fold it in.
  4. Form Cloud Bread Domes: Using a spatula, form the mixture into two dome shapes on the prepared baking sheet. Round out the tops for an even shape. Let the domes sit for 5 to 10 minutes to allow some air bubbles to settle.
  5. Bake: Bake the domes in the preheated oven for 25 to 30 minutes. The breads are done when the outside develops a slight golden hue or a golden color if food coloring is used.

Notes

  • You may substitute almond extract (use ½ teaspoon) or lemon extract (use ¼ teaspoon) instead of vanilla extract to vary flavor, as the full teaspoon would be overpowering.
  • Enjoy the cloud bread immediately after baking for best texture; it cannot be saved and will deflate within an hour outside the oven.
  • To serve, either cut around the parchment paper and place on plates or carefully lift from the bottom to avoid breaking.
  • Be gentle with the outside crust to avoid peeling it off. Cloud bread is very sticky and similar to a stickier cotton candy texture, so use a fork or spoon to eat.
