Description

This Chicken, Spinach, and Mushroom Low-Carb Oven Dish is a delicious and easy-to-make recipe that’s perfect for a satisfying dinner. Tender chicken breasts are layered with creamy green onion cheese, sautéed mushrooms, fresh baby spinach, and topped with melted mozzarella cheese.


Ingredients

Chicken:

  • 6 thin-sliced chicken breasts

Cream Sauce:

  • 1 container (8 oz) green onion cream cheese
  • ¼ cup olive oil
  • ½ cup chicken broth

Vegetables:

  • 1 large package of sliced mushrooms
  • 1 small bag of fresh baby spinach

Seasoning and Cheese:

  • 1 dash Weber Herb and Garlic Seasoning
  • 8 oz shredded mozzarella cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Chicken: Arrange the chicken breasts in a single layer in a 13×9-inch baking dish. Season with salt, pepper, and Weber Herb and Garlic Seasoning.
  3. Prepare Vegetables: Sauté the mushrooms in olive oil until softened. Sprinkle over the chicken, followed by the fresh spinach.
  4. Make Cream Sauce: In a bowl, mix green onion cream cheese, chicken broth, and olive oil to create a sauce. Pour evenly over the chicken and vegetables.
  5. Bake: Cover the dish loosely with foil and bake for 20 minutes. Remove foil and bake for an additional 20 minutes. Sprinkle mozzarella cheese on top and bake for 5-10 more minutes until melted and bubbly.
