Description

These Cheesy Potato Burritos are the ultimate comfort meal, stuffed with crispy tater tots, seasoned ground beef, two kinds of melty cheese, and a smoky chipotle kick. Baked until golden and bubbly, they’re hearty, satisfying, and easy enough for a weeknight dinner the whole family will love.

Ingredients

Main Filling

  • 1 pound ground beef (or substitute with ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded monterey jack cheese
  • Salt and pepper, to taste

Sauces & Condiments

  • 1/2 cup sour cream (plus extra for serving)
  • 1/4 cup Taco Bell chipotle sauce, adjust to taste (plus extra for serving)

Tortillas

  • 6 large flour tortilla wraps

Optional Toppings

  • Diced tomatoes
  • Chopped green onions
  • Cilantro

Instructions

  1. Cook the Tater Tots: Preheat your oven according to the tater tot package instructions. Arrange the tater tots on a baking sheet and bake until golden and crispy. Set aside.
  2. Brown the Ground Beef: In a large skillet over medium heat, add the ground beef. Season with salt and pepper. Cook, breaking up the meat, until fully browned. Drain off any excess grease.
  3. Combine the Filling: In a large mixing bowl, add the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix until everything is evenly combined.
  4. Warm the Tortillas: To make the tortillas more pliable and easier to roll, warm them in a dry skillet or microwave for about 10–15 seconds each.
  5. Assemble the Burritos: Spoon a generous portion of the cheesy potato-beef filling onto the center of each tortilla. Drizzle with Taco Bell chipotle sauce and add a dollop of sour cream.
  6. Roll the Burritos: Fold the sides of each tortilla over the filling, then fold up the bottom and roll tightly to form a burrito.
  7. Bake with Cheese: Place the assembled burritos seam-side down in a baking dish. Sprinkle additional shredded cheese over the top. Bake in the oven for a few minutes until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove from the oven. Garnish with diced tomatoes, chopped green onions, and cilantro, if desired. Serve hot with extra sour cream and chipotle sauce on the side.

Notes

  • Warming the tortillas helps prevent them from cracking when rolling the burritos.
  • You can substitute ground beef with ground turkey or a plant-based meat alternative to suit your preferences.
  • Try adding black beans, sautéed peppers, or corn for extra flavor and nutrition.
  • For a crispier burrito exterior, sear the filled burritos in a dry skillet before adding cheese and baking.
