Ingredients
Main Filling
- 1 pound ground beef (or substitute with ground turkey or plant-based alternative)
- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded monterey jack cheese
- Salt and pepper, to taste

Instructions
- Cook the Tater Tots: Preheat your oven according to the tater tot package instructions. Arrange the tater tots on a baking sheet and bake until golden and crispy. Set aside.
- Brown the Ground Beef: In a large skillet over medium heat, add the ground beef. Season with salt and pepper. Cook, breaking up the meat, until fully browned. Drain off any excess grease.
- Combine the Filling: In a large mixing bowl, add the cooked ground beef, crispy tater tots (slightly crushed), shredded cheddar cheese, and shredded monterey jack cheese. Mix until everything is evenly combined.
- Warm the Tortillas: To make the tortillas more pliable and easier to roll, warm them in a dry skillet or microwave for about 10–15 seconds each.
- Assemble the Burritos: Spoon a generous portion of the cheesy potato-beef filling onto the center of each tortilla. Drizzle with Taco Bell chipotle sauce and add a dollop of sour cream.
- Roll the Burritos: Fold the sides of each tortilla over the filling, then fold up the bottom and roll tightly to form a burrito.
- Bake with Cheese: Place the assembled burritos seam-side down in a baking dish. Sprinkle additional shredded cheese over the top. Bake in the oven for a few minutes until the cheese is melted and bubbly.
- Garnish and Serve: Remove from the oven. Garnish with diced tomatoes, chopped green onions, and cilantro, if desired. Serve hot with extra sour cream and chipotle sauce on the side.
