Ingredients
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 cup panko breadcrumbs
2 large eggs

Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the cheese mixture: In a large bowl, combine the shredded mozzarella and grated Parmesan cheese until well mixed.
- Prepare the egg wash: In a separate bowl, whisk the eggs together with salt and pepper.
- Form the bites: Scoop out portions of the cheese mixture and roll them into golf ball-sized bites.
- Coat the bites: Dip each bite into the egg wash, then roll it in the panko breadcrumbs until fully coated.
- Bake: Place the coated bites on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown and crispy.
- Serve: Garnish with fresh parsley if desired and serve hot.
Notes
For added flavor, mix in some Italian seasoning or garlic powder with the breadcrumbs.
For a spicy version, add a pinch of red pepper flakes to the cheese mixture.
Feel free to use other cheeses like cheddar or provolone for a different twist.
If you prefer extra crispiness, double the breadcrumbs or add grated Parmesan to the panko.
