Description

Delight in the warm, comforting flavors of fall with this Chai Spice Maple Pumpkin Bread. A moist and flavorful pumpkin bread infused with chai spices and drizzled with a sweet maple glaze, perfect for breakfast or as a snack with your favorite hot beverage.

Ingredients

For the Pumpkin Bread:

  • 1/4 cup melted butter
  • 1 cup pumpkin puree
  • 1/3 cup Greek yogurt
  • 2 large eggs
  • 1/2 cup light brown sugar (or coconut sugar)
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 11/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves

For the Maple Glaze:

  • 1/2 cup powdered sugar
  • 2 tablespoons maple syrup
  • 12 teaspoons milk

Instructions

  1. Prep the pan and oven: Preheat oven to 350F. Line a 9×5 loaf pan with parchment paper, letting it hang over the sides. Set aside.
  2. Make the batter: In a large bowl, whisk melted butter, pumpkin, yogurt, eggs, sugar, maple syrup, and vanilla until smooth. In a separate bowl, combine flour, baking soda, baking powder, salt, and spices. Fold the flour mixture into the liquid until the batter is just combined. Scrape the batter into the prepared pan and gently smooth the top.
  3. Bake the bread: Bake the bread at 350F for 45-50 minutes or until a toothpick inserted in the middle comes out clean. Cool the bread completely on a wire cooling rack.
  4. Make the Maple Glaze: In a small bowl, whisk powdered sugar, syrup, and just enough milk to give the glaze a drizzling consistency. Pour the glaze over the pumpkin bread and let it stand for 10 minutes before slicing and serving. Enjoy!

Notes

  • You can customize the spice level by adjusting the amounts of chai spices to suit your taste.
  • This bread freezes well, so you can make a double batch and save some for later.
