Ingredients

For the Peaches

  • 6 fresh peaches (the fresher the better)
  • 2 Tbsp lemon juice
  • 1/4 cup pure maple syrup

Instructions

  1. Prep the Peaches: (Optional) To easily peel the peaches, bring a pot of water to a boil and blanch the peaches for 1 minute. Immediately transfer to an ice water bath for 5 minutes, then peel off the skins. If desired, you can skip peeling. Cut the peaches in half, remove the pits, and slice each into wedges.
  2. Toss the Peaches: In a large mixing bowl, gently toss the peach wedges with lemon juice, maple syrup, and kosher salt until evenly coated.
  3. Melt the Butter: Heat a large skillet over medium heat and add the unsalted butter. Allow it to melt and start to bubble slightly without browning.
  4. Caramelize the Peaches: Add the peach mixture to the skillet. Cook, stirring occasionally, until the peaches soften and the syrup thickens and caramelizes, about 10 minutes. The peaches should be tender with slightly crisp, golden edges.
