Ingredients
Meat and Aromatics
- 1 tbsp vegetable oil
- 1.1 pounds ground beef
- 6 garlic cloves – grated
- 3 scallions – chopped (white parts separated from green tops)
- 2 carrots – peeled and grated
- ½ red apple – grated
Sauce
- ½ cup low sodium soy sauce
- 3 tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tbsp brown sugar or honey
- 1 tbsp Gochujang sauce (adjust to taste)
Noodles
- 2 packs (17 oz – 500 g) udon noodles – vacuum-packed and pre-cooked
Instructions
- Prep the ingredients: Chop the white parts of the scallions separately from the green tops. Grate the carrots, garlic cloves, and red apple finely to prepare for cooking.
- Make the sauce: In a jar, combine the low sodium soy sauce, brown sugar (or honey), rice vinegar, and sesame oil. Shake or stir well until the sugar dissolves and the mixture is smooth.
- Prepare the noodles: Rinse the pre-cooked udon noodles under cold water to loosen them gently, ensuring they separate without breaking.
- Cook the beef: Heat the vegetable oil in a large skillet or wok over high heat. Add the ground beef and break it up into small pieces with a spatula. Cook until the beef is browned and crispy, about 5-7 minutes.
- Add aromatics and gochujang: Stir in the grated garlic, grated carrots, grated apple, and the white parts of the scallions along with the gochujang sauce. Cook everything together for 2 minutes, allowing flavors to meld.
- Incorporate the sauce and simmer: Pour the prepared sauce into the skillet, bring it to a boil, then reduce heat to simmer for 1 minute to slightly thicken and blend flavors.
- Combine noodles and finish: Add the udon noodles and the green tops of the scallions. Stir everything thoroughly to combine and cook for an additional 1 minute to heat through.
- Serve and enjoy: Remove from heat and serve the Bulgogi Beef Noodles immediately for the best taste and texture.
