Ingredients

For the Tacos

  • 4 low carb flour tortillas (8 inch)
  • 1 lb ground chicken
  • ⅓ cup buffalo sauce
  • 4 tsp ranch seasoning, divided
  • ½ cup bleu cheese crumbles, divided
  • ¼ cup red onions, diced
  • 1.5 cups lettuce, chopped

For the Ranch Topping

  • ¾ cup plain low-fat Greek yogurt
  • 2 tsp ranch seasoning
  • 1-2 tbsp milk (optional, to thin the dressing)

Instructions

  1. Prepare the chicken mixture. In a large bowl, combine 1 lb ground chicken, 2 tbsp buffalo sauce, 2 tsp ranch seasoning, and ¼ cup bleu cheese crumbles. Mix thoroughly to evenly distribute the spices and sauce.
  2. Preheat the skillet. Heat a skillet over medium heat with a small amount of oil or butter to prevent sticking and aid in cooking.
  3. Assemble the tacos. Use the back of a spoon to spread one-quarter of the buffalo chicken mixture evenly onto each of the four low-carb tortillas, pressing it flat.
  4. Cook the tacos. Place each tortilla, chicken-side down, on the hot skillet. Cook for 4 to 5 minutes until the chicken is cooked through and the tortilla base is crispy. Then flip the taco and cook the other side for an additional 1 minute. Repeat this process for all four tacos.
  5. Make the ranch topping. In a small bowl, mix ¾ cup Greek yogurt with 2 tsp ranch seasoning. If a thinner consistency is preferred, add 1 to 2 tablespoons of milk and stir until combined.
  6. Assemble and serve. After cooking, top each taco with the remaining buffalo sauce, the prepared ranch dressing, the remaining bleu cheese crumbles, diced red onions, and chopped lettuce. Serve immediately and enjoy the bold flavors.
