Nachos
- 1 large bag tortilla chips
- 2 cups cooked chicken, shredded or diced (rotisserie works great)
- ½ cup buffalo sauce (adjust to taste)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- ½ cup mozzarella cheese (optional, for extra meltiness)
Toppings (optional but recommended)
- ¼ cup red onion, thinly sliced
- ¼ cup diced celery
- 1 jalapeño, sliced
- Chopped green onions
- Fresh cilantro or parsley
Drizzle & Finish
- Ranch or blue cheese dressing
- Extra buffalo sauce for drizzling
Instructions
- Preheat Oven: Heat the oven to 400°F (205°C) and line a large baking sheet with parchment paper or foil for easy cleanup.
- Buffalo the Chicken: Toss the cooked shredded or diced chicken with buffalo sauce thoroughly until the chicken is evenly coated with the spicy sauce.
- Assemble Nachos: Spread the tortilla chips evenly across the baking sheet. Sprinkle half of the shredded cheese over the chips, then distribute the buffalo chicken evenly on top. Add the remaining cheese over the chicken layer. If using, scatter sliced red onion, diced celery, and jalapeño slices over the cheese layer.
- Bake: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes, or until the cheese is fully melted, bubbly, and slightly golden.
- Finish & Serve: Remove the nachos from the oven and immediately drizzle with ranch or blue cheese dressing, and additional buffalo sauce if desired. Garnish with chopped green onions and fresh cilantro or parsley. Serve hot for best flavor and texture.
