Ingredients

For the Beef and Eggs

  • 1/2 pound ground beef
  • 6 large eggs, beaten

For the Sandwich

  • 8 slices Colby-Jack cheese
  • 8 slices sourdough bread
  • 4 tablespoons soft butter, divided

Instructions

  1. Cook the Ground Beef: In a large non-stick skillet over medium heat, cook and crumble the ground beef until it is no longer pink. Once fully cooked, transfer the beef to a medium-sized bowl lined with a paper towel to absorb excess fat. Set aside and wipe out the skillet with a paper towel.
  2. Scramble the Eggs: Melt 2 tablespoons of butter in the same skillet over medium-high heat. Pour in the beaten eggs. As the eggs begin to set, gently stir to scramble them, cooking until the liquid is nearly gone but the eggs remain soft. Remove the pan from heat.
  3. Combine Beef and Eggs: Remove the paper towel from under the beef, leaving the beef in the bowl. Add the scrambled eggs to the bowl with the beef and gently stir until well combined.
  4. Prepare the Skillet: Wipe the skillet clean again and place it back over medium heat.
  5. Assemble the Sandwich: Butter one side of each sourdough bread slice. Place one slice of bread into the skillet, butter side down.
  6. Layer Cheese, Beef, and Eggs: Top each slice in the skillet with one slice of Colby-Jack cheese, scoop about 1/2 cup of the beef-egg mixture over the cheese, then add a second slice of Colby-Jack cheese. Finish with another slice of bread, butter side up.
  7. Grill the Sandwich: Cook each sandwich until the bottom bread is golden brown, about 3-4 minutes. Carefully flip the sandwich and continue to cook until the other side is golden brown and the cheese is melted.
