Description

This Banana Bread Baked Oatmeal is a cozy, wholesome breakfast that combines the nostalgic flavor of banana bread with the heartiness of baked oats. Ingredients

Dry Ingredients

  • 2 1/4 cups rolled oats
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Wet Ingredients

  • ~1 cup mashed banana (about 2 large or 3 medium bananas)
  • 2 eggs
  • 1 1/2 cups unsweetened almond milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract

Mix-Ins (Optional)

  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips
  • Banana coins (sliced banana)

Instructions

  1. Preheat the Oven & Prepare Pan – Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish with nonstick spray. For easy lifting and cleanup, you can place a piece of parchment paper on the bottom as a liner.
  2. Mix Dry Ingredients – In a small bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, and salt. Stir until evenly mixed.
  3. Prepare Wet Ingredients – In a large bowl, mash the bananas until completely smooth. Whisk in the eggs until fully incorporated. Stir in the almond milk, maple syrup, and vanilla extract until everything is well mixed.
  4. Combine Mixtures – Add the dry oat mixture to the wet mixture. Stir everything together until just combined. If you are including optional mix-ins like walnuts, chocolate chips, or banana coins, fold them in at this stage.
  5. Bake – Pour the batter into the prepared baking dish. Smooth the top with a spatula. Bake for 40-45 minutes, or until the oatmeal is set and the top is golden brown.
  6. Cool & Serve – Remove from the oven and let the baked oatmeal cool in the pan before cutting into squares. Enjoy warm or at room temperature!
