Description

This delicious Baked Oatmeal with Caramelized Apples combines tender, sweet apples sautéed with brown sugar and spices with a warm, comforting oatmeal bake. Perfect for a hearty breakfast or brunch, it’s an easy-to-make dish that blends the cozy flavors of cinnamon and allspice with wholesome oats.

Ingredients

Caramelized Apples

  • 4 apples, peeled and diced
  • 4 tbsp butter
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ tsp kosher salt

Baked Oatmeal

  • 1 ½ cups milk
  • 2 eggs
  • ⅓ cup brown sugar
  • 2 cups quick cooking oats
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp kosher salt
  • 4 tbsp butter, melted
  • recipe Caramelized Apples (from above)

Instructions

  1. Prepare Caramelized Apples: Peel and dice the apples into bite-sized pieces. Heat a skillet over medium-high heat and melt the butter. Add the diced apples to the skillet and cook for a couple of minutes until they start to soften. Stir in the brown sugar, cinnamon, and kosher salt, then continue to cook, stirring occasionally, until the apples are tender and nicely caramelized. Remove from heat and let cool slightly.
  2. Preheat Oven and Prepare Baking Dish: Set your oven to 375°F (190°C). Spray an 11×7 inch baking dish with non-stick spray to prevent sticking. Set the dish aside until ready to use.
  3. Mix Baked Oatmeal Ingredients: In a large mixing bowl, whisk together the milk and eggs until well combined. Add the brown sugar and stir until dissolved. Add the quick cooking oats, baking powder, cinnamon, allspice, and kosher salt, stirring to evenly distribute all dry ingredients. Pour in the melted butter and stir in the caramelized apples—reserving two-thirds of the apples for serving later.
  4. Assemble and Bake: Pour the oatmeal mixture into the prepared baking dish, spreading it out evenly. Place the dish in the preheated oven and bake for 25 to 30 minutes or until the oatmeal is set in the center and lightly golden on top. Remove from the oven and allow to cool for about 5 minutes.
  5. Serve: Reheat the remaining caramelized apples gently on the stove or in the microwave. Cut the baked oatmeal into portions, top each serving with warm caramelized apples, and enjoy immediately.

Notes

  • You can use any variety of apples you prefer; tart apples like Granny Smith hold up well for caramelizing.
  • For a dairy-free version, substitute the milk with almond or oat milk and use vegan butter.
  • Leftover baked oatmeal can be refrigerated and reheated in the microwave.
  • If you like a crunch, sprinkle chopped nuts like walnuts or pecans on top before baking.
  • The baking time may vary slightly depending on your oven; check for a set center.
