Streusel Topping:

  • ½ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¼ cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a 12-cup muffin pan with paper liners.
  2. Mix dry ingredients: In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt.
  3. Mix wet ingredients: In a separate bowl, whisk egg, milk, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients: Pour wet ingredients into dry and stir until just moistened.
  5. Add apples: Gently fold in chopped apples.
  6. Make streusel topping: Mix flour, brown sugar, and cinnamon; cut in cold butter until crumbly.
