Ingredients

For the Bread:

  • 2 medium baking apples, peeled and chopped
  • 1/2 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 large egg, room temperature
  • 1/3 cup white granulated sugar
  • 1/4 cup vegetable oil
  • 1/4 cup full-fat sour cream, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt

For the Glaze:

  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 3 tablespoons milk

Instructions

  1. Make Apple Fritter Bread: Preheat oven to 350 degrees F. Prepare loaf pan with nonstick spray. Mix apples, brown sugar, cinnamon, and ginger. Set aside.
  2. In a large bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla. In another bowl, whisk flour, baking soda, and salt; then add to wet ingredients. Fold in most of the apple mixture. Pour into pan.
  3. Top with remaining apples. Bake for 50-55 minutes. Cool for 30 minutes before serving.
  4. Make the Powdered Sugar Glaze: Whisk powdered sugar, vanilla, and milk until smooth. Pour over bread before serving.
