Ingredients
For the Bread:
- 2 medium baking apples, peeled and chopped
- 1/2 cup light brown sugar
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- 1 large egg, room temperature
- 1/3 cup white granulated sugar
- 1/4 cup vegetable oil
- 1/4 cup full-fat sour cream, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
For the Glaze:
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- 3 tablespoons milk
Instructions
- Make Apple Fritter Bread: Preheat oven to 350 degrees F. Prepare loaf pan with nonstick spray. Mix apples, brown sugar, cinnamon, and ginger. Set aside.
- In a large bowl, whisk egg, granulated sugar, oil, sour cream, and vanilla. In another bowl, whisk flour, baking soda, and salt; then add to wet ingredients. Fold in most of the apple mixture. Pour into pan.
- Top with remaining apples. Bake for 50-55 minutes. Cool for 30 minutes before serving.
- Make the Powdered Sugar Glaze: Whisk powdered sugar, vanilla, and milk until smooth. Pour over bread before serving.
