Instructions

  1. Prepare the egg mixture: In a shallow dish, whisk together the eggs, flour, salt, and black pepper until smooth and well combined to create a seasoned batter for the zucchini slices.
  2. Make the breadcrumb coating: In another shallow dish, mix the panko breadcrumbs and grated parmesan cheese thoroughly. This will form the crispy coating layer.
  3. Coat the zucchini: Dip each zucchini slice first into the egg mixture, ensuring it is fully coated, then press it firmly into the breadcrumb and parmesan mixture to adhere an even layer of coating. Place the coated slices on a baking sheet to prepare for air frying.
