Ingredients
Rice Paper Rolls
- 8 rice paper sheets
- 1 cup cooked vermicelli noodles
- 1/2 cup shredded carrots
- 1 cup finely chopped cabbage
- 1 block of firm tofu (or 8 cooked shrimp)
- 2 tablespoons green onion, sliced
- 2 teaspoons grated ginger
- 1 tablespoon minced garlic
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (or rice vinegar)
- 1 tablespoon sesame oil
- 1/2 teaspoon sugar
- Oil spray or neutral oil for air frying
Optional Dipping Sauces
- Sweet chili sauce
- Peanut sauce
- Soy-ginger sauce
Instructions
- Soften Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until just soft and pliable, ready for wrapping without tearing.
- Prepare Wrapping Surface: Transfer the softened rice paper onto a damp surface like a wooden board or a clean, moist towel to prevent sticking.
- Add Filling: Place a small layer of vermicelli noodles, shredded carrots, cabbage, and either tofu or shrimp in the center of the rice paper, distributing evenly but not overcrowding.
- Roll the Rice Paper: Fold in the sides of the rice paper, then roll tightly from the bottom up like a burrito to encase the filling securely.
- Prepare Rolls for Air Frying: Lightly brush or spray each rice paper roll with sesame oil or a neutral oil to promote crispiness in the air fryer.
- Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 2–3 minutes to ensure even cooking.
- Air Fry Rolls: Place the rolls seam-side down in the air fryer basket in a single layer, avoiding overcrowding to allow hot air circulation.
- Cook and Flip: Air fry for 8–10 minutes, flipping the rolls halfway through cooking until they turn golden brown and crispy on both sides.
- Serve: Remove rolls from the air fryer and serve immediately, paired with your favorite dipping sauces like sweet chili, peanut, or soy-ginger.
Notes
- For extra crunchiness, extend the air frying time by 1–2 minutes carefully monitoring to avoid burning.
- Avoid over-soaking the rice paper as it can become too soft and difficult to roll, increasing the risk of tearing.
- These rolls freeze well before cooking; you can air fry them directly from frozen adding a few extra minutes to cooking time.
- Experiment with different fillings such as mushrooms, shredded chicken, or avocado for a tasty variation.
