- 300 g (10.5 oz) ribeye steak, chopped into 1 inch (2.5 cm) pieces
- 1 tbsp neutral oil (such as avocado oil)
- ¼ tsp salt
- ½ tsp black pepper
- ½ tsp chilli flakes (red pepper flakes)
- ¼ tsp garlic powder (or garlic salt; omit ¼ tsp regular salt if using garlic salt)
- ¼ tsp dried oregano
- ¼ tsp smoked paprika

- Freshly chopped parsley
Instructions
- Preheat the Air Fryer: Preheat your air fryer to 200°C (400°F) for 5 minutes to ensure it is hot and ready for even cooking.
- Season the Steak: Place the chopped ribeye steak pieces in a bowl and drizzle with the neutral oil. Sprinkle salt, black pepper, chili flakes, garlic powder, dried oregano, and smoked paprika over the steak.
- Mix the Seasonings: Toss the steak pieces thoroughly in the bowl so they are evenly coated with the oil and seasoning mixture.
- Cook the Steak Bites: Transfer the seasoned steak chunks to the preheated air fryer basket. Air fry at 200°C (400°F) for 6 to 8 minutes, shaking or tossing the basket halfway through to ensure even browning and a golden crust.
- Rest and Serve: Remove the steak bites from the air fryer and let them rest for 2 to 3 minutes on a warm plate. Garnish with freshly chopped parsley and serve immediately for the best flavor and juiciness.

- Charred Peppers and Green Beans: For a rice bowl version, toss ½ red bell pepper and ½ yellow bell pepper chopped into chunky pieces, and 60 g (1 ¼ oz) green beans chopped into 1 inch pieces with ¼ tsp each salt and pepper and spray with 10 squirts of oil. Air fry at 200°C (400°F) for 5 minutes alongside or separately.
- Steak Type Recommendations: Use ribeye or sirloin steak for juicier, more tender bites. Alternatives include beef medallions (UK), strip steak, top sirloin, or tenderloin tips (USA). Avoid stewing or casserole steaks as they are too tough for quick cooking.
- Garlic Powder vs. Garlic Salt: If using garlic salt instead of garlic powder, omit the additional ¼ tsp of regular salt to prevent over-salting.
