Description

Crispy and flavorful Air Fryer Hasselback Potatoes with a buttery garlic seasoning and a fresh parsley garnish, perfect as a side dish or a snack. These potatoes are sliced thinly without cutting all the way through, allowing the butter and garlic to infuse every layer while crisping beautifully in the air fryer.


Ingredients

Potatoes

  • 4 medium potatoes (Russet or Yukon Gold)

Butter Mixture

  • 6 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper

Garnish

  • 1 tbsp fresh parsley, chopped


Instructions

  1. Prepare the Potatoes: Place two knives or chopsticks on either side of each potato to act as a slicing guide. Carefully slice each potato crosswise every 3 to 4 mm until the knives stop the cut, making thin, evenly spaced cuts without cutting all the way through. Set the prepared potatoes aside.
  2. Make the Butter Mixture: In a small bowl, combine the melted butter, minced garlic, salt, and pepper. Stir well to incorporate all the ingredients evenly.
  3. Brush the Potatoes: Using a pastry brush, gently coat the tops and between the potato slices with the butter mixture. Take care to avoid breaking the potatoes apart. Reserve any leftover butter mixture for basting during cooking.
  4. Air Fry Initial Cook: Place the buttered potatoes into the air fryer basket. Set the air fryer to 375°F (190°C) and cook for 10 minutes.
  5. Baste and Continue Cooking: After 10 minutes, remove the potatoes and brush more of the butter mixture over the tops and inside the slices. If the butter mixture has been used up, melt 1 additional tablespoon of butter to brush on. Return the potatoes to the air fryer and continue cooking for another 15 minutes, or until the potatoes are tender from top to bottom and have developed a crispy edge.
  6. Serve and Garnish: Carefully remove the potatoes from the air fryer, sprinkle with chopped fresh parsley, and serve hot.
