Ingredients

Chicken and Marinade

  • Pounds Chicken Breast, cut into 2-3 inch pieces
  • ¼ Cup Plain Coconut Yogurt (or any plain yogurt)

  • 1 Teaspoon Salt
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Black Pepper

Vegetables

  • 2 Bell Peppers, skin and white membranes removed, cut into 2 inch chunks
  • 1-2 Red Onions, peeled and cut into 2 inch chunks


Instructions

  1. Prepare the Chicken: Cut the chicken breast into bite-sized pieces about 2-3 inches long to ensure even cooking.
  2. Marinate the Chicken: In a bowl, combine the chicken pieces with plain coconut yogurt, chopped cilantro, salt, garlic powder, and black pepper. Mix thoroughly until the chicken is fully coated. Cover and refrigerate for 30 minutes to let the flavors infuse.
  3. Prepare the Vegetables: While the chicken marinates, chop the bell peppers and red onions into large chunks roughly 2 inches in size. Remove any skin and white membranes from the bell peppers for better texture and taste.
  4. Assemble the Kabobs: Thread the marinated chicken, red onion, and bell pepper pieces alternately onto skewers, repeating the pattern until all chicken and vegetables are used.
