Ingredients
Air Fryer Artichoke Hearts
- 1 teaspoon garlic powder
- ¼ teaspoon kosher salt
- 2 tablespoons olive oil
- ½ cup Parmesan cheese, freshly grated
- 2 (14 oz) cans artichoke hearts, halved in water
- Cooking spray, for air fryer
Garlic Aioli
- ¼ cup mayonnaise
- ½ teaspoon smoked paprika
- ¼ teaspoon kosher salt
- 1 large clove garlic, grated
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
Instructions
- Preheat the air fryer: Set your air fryer to 400ºF to get it ready for cooking the artichoke hearts. This ensures a crispy finish.
- Prepare the artichokes: Drain and halve the artichoke hearts if whole. Pat them dry using paper towels by gently pressing to remove excess moisture, which helps achieve crispiness.
- Toss with seasoning: In a bowl, combine the artichokes with olive oil, garlic powder, and kosher salt. Toss gently to coat evenly, then add the grated Parmesan cheese and toss again until well covered.
- Air fry the artichokes (first side): Spray the air fryer basket with cooking spray to prevent sticking. Place the coated artichokes inside and air fry for 5 minutes at 400ºF.
- Flip and air fry (second side): Flip the artichokes carefully to cook evenly and air fry for another 5 minutes until golden and crispy.
- Make the garlic aioli: In a small bowl, whisk together mayonnaise, smoked paprika, grated garlic, lemon zest, lemon juice, and kosher salt until smooth and well combined.
- Serve: Transfer the crispy artichoke hearts to a serving platter and serve alongside the garlic aioli for dipping. Enjoy immediately while warm.
Notes
- Make sure to dry the artichoke hearts thoroughly to maximize crispiness in the air fryer.
- Freshly grated Parmesan cheese delivers the best flavor and texture.
- Adjust garlic aioli seasoning to taste, adding more lemon juice or garlic as preferred.
- Leftovers can be stored in the refrigerator and reheated in the air fryer for best results.
- Use olive oil spray or another high smoke point oil for coating the air fryer basket to avoid sticking.
