A creamy and flavorful vegetarian buffalo dip made with white beans, three types of cheese, and buffalo sauce. Baked to bubbly perfection and perfect for parties or game day, this protein- and fiber-packed appetizer pairs wonderfully with tortilla chips and fresh veggies like carrots and celery.
Ingredients
Buffalo White Bean Base
- 1 (15 ounce) can white beans, rinsed and drained
- 4 ounces cream cheese
- ½ cup plain whole milk Greek yogurt (or sour cream)
- 2/3 cup medium or hot buffalo sauce
Mix-ins
- 1 (15 ounce) can white beans, rinsed and drained
- ¾ cup shredded mozzarella cheese, divided
- ¾ cup sharp cheddar cheese (or spicy cheddar), divided
- ¼ cup diced green onion (green part only)
To Garnish
- Fresh cilantro
- Extra green onion
For Serving
- Tortilla chips
- Carrot sticks
- Celery sticks
Instructions
- Preheat and Prepare: Preheat your oven to 375°F (190°C). Grease a 9-inch oven-safe skillet or an 8×8 inch baking dish with nonstick cooking spray and set it aside.
- Blend the Base: In a food processor, combine one can of rinsed and drained white beans, cream cheese, plain Greek yogurt, and buffalo sauce. Process until the mixture is completely smooth, creating a creamy buffalo white bean base.
- Combine Mix-ins: Pour the blended mixture into the prepared skillet or baking dish. Gently fold in the remaining can of rinsed and drained white beans, ¼ cup shredded mozzarella cheese, ¼ cup shredded sharp or spicy cheddar cheese, and diced green onions. Spread this mixture evenly.
- Add Cheese Topping and Bake: Sprinkle the remaining mozzarella and cheddar cheese evenly over the top of the dip. Bake in your preheated oven for 25-30 minutes, or until the cheese is bubbling and has started to turn a light golden brown around the edges.
- Garnish and Serve: Remove from oven, garnish with fresh cilantro and extra green onion. Serve the dip immediately with tortilla chips, pita chips, or fresh carrot and celery sticks.
Notes
- For a spicier dip, use a spicy buffalo sauce and spicy shredded cheddar cheese.
- Add sliced jalapeños on top before baking for extra heat.
