Ingredients
Meat and Vegetables
- 1 pound ground breakfast sausage
- 1 red bell pepper, core removed and diced
- 1/2 cup diced yellow onion
Egg Mixture
- 8 eggs
- 1 cup milk (whole milk or 2%)
- 1/3 cup plain Greek yogurt (full-fat or low-fat)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon kosher salt
- Freshly ground black pepper to taste

- 32 ounces frozen tater tots (about half the bag used)
- 1 cup shredded Havarti cheese or cheese of choice
- Sliced green onions for garnish (optional)
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Mix Egg Base: In a large glass measuring cup or mixing bowl, whisk together the eggs. Add milk, Greek yogurt, garlic powder, smoked paprika, kosher salt, and freshly ground black pepper. Whisk until all ingredients are well combined and smooth.
- Cook Sausage: Heat a skillet over medium-high heat. Add the ground breakfast sausage and cook, crumbling it as it browns. Once fully cooked, transfer the sausage to a plate lined with paper towels to drain excess grease.
- Sauté Vegetables: In the same skillet, add the diced onion and red bell pepper. Cook for 3-4 minutes until they soften and become fragrant.
- Assemble Casserole Layers: Spread the cooked sausage evenly in a single layer at the bottom of the prepared baking dish. Layer the sautéed onions and peppers on top of the sausage. Pour the egg mixture evenly over the meat and vegetables.
- Add Tater Tots and Cheese: Arrange the frozen tater tots in a single layer on top of the egg mixture. Sprinkle shredded Havarti cheese evenly over the tater tots.
- Bake Until Set: Place the casserole in the middle rack of the oven. Bake for 45-55 minutes or until the center is fully set and the tater tots are crispy and golden brown.
