- 2 lbs new potatoes or small firm potatoes, sliced in half or quarters
- 1 lb green beans, washed, ends trimmed and cut in half lengthwise

- ½ teaspoon garlic powder
- ½ teaspoon dried thyme
- ½ teaspoon dried rosemary
- ½ teaspoon ground black pepper
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly brush it with olive oil to prevent sticking.
- Mix Seasoning and Oil: In a small bowl, combine the olive oil, sea salt, garlic powder, dried thyme, dried rosemary, and ground black pepper, stirring well to create a flavorful oil mixture.
- Season Potatoes: Place the sliced potatoes in a large bowl and add about a third of the oil and spice mixture. Toss thoroughly to coat the potatoes evenly with the seasoning.
- Roast Potatoes: Arrange the seasoned potatoes evenly on the prepared baking sheet. Roast in the oven for 30 minutes, stirring once halfway through to ensure even cooking and browning.
- Prepare Green Beans: While the potatoes roast, add the green beans to the remaining oil and spice mixture in the bowl. Toss well to coat all the beans evenly.
- Add Green Beans to Baking Sheet: After the initial 30 minutes, remove the baking sheet and add the green beans in a single even layer alongside the potatoes.
- Continue Roasting: Return the baking sheet to the oven and roast for an additional 10 to 15 minutes, or until the potatoes are golden brown and both the potatoes and green beans are fork tender.
- Finish and Serve: Remove from the oven, season with a little extra salt and pepper if desired, and serve warm as a perfect side dish.
