Description

This Inside Out Egg Roll in a Bowl recipe is a quick and flavorful dish that captures all the delicious flavors of an egg roll without the wrapper. It’s a low-carb, high-protein meal that is perfect for busy weeknights.


Ingredients

Ingredients:

  • 1 pound lean ground beef or turkey
  • 1 teaspoon minced garlic (12 cloves)
  • 1416 ounces coleslaw mix or 6 cups finely sliced cabbage
  • ⅓ cup low sodium soy sauce or tamari
  • 1 teaspoon hot sauce
  • 1 teaspoon ground ginger
  • ½ teaspoon onion powder
  • pinch ground cloves (optional)
  • 1 ½ tablespoons sesame oil
  • 3 green onions, sliced
  • sesame seeds for serving (optional)

Instructions

  1. Heat a large, heavy-bottomed skillet over medium heat. Add the ground beef, breaking it up with a wooden spoon, and cook until browned.
  2. Drain off any excess grease and add the garlic, sautéing just until fragrant (30-60 seconds).
  3. Add in the coleslaw mix (or finely sliced cabbage) and toss to combine with the ground beef and garlic.
  4. Pour in the soy sauce and stir well to coat the cabbage and ground beef.
  5. Add the hot sauce, ground ginger, onion powder, and cloves (if using). Stir well.
  6. Add a lid to the skillet and cook until the cabbage is soft, about 2-5 minutes.
  7. Remove from heat and finish with toasted sesame oil. Toss to combine.
  8. Taste and adjust seasonings as needed. Serve in bowls topped with green onions and sesame seeds.

Notes

  • Coleslaw mix vs. cabbage: You can use pre-shredded coleslaw mix or fresh finely sliced cabbage.
  • Meat options: Ground turkey or chicken can be substituted for beef with added oil for browning.
