Description

A vibrant and herby Green Goddess Pasta Sauce that is luxuriously creamy and bursting with fresh flavors. This recipe is a delightful twist on traditional pasta sauces.


Ingredients

Fresh Herb Blend:

  • 1/4 cup fresh dill
  • 1/4 cup fresh chives
  • 1/4 cup fresh cilantro

Sauce Base:

  • 1/2 shallot
  • 1/3 cup high quality extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/2 cup cottage cheese
  • 1/4 cup plain greek yogurt
  • 1/4 cup pasta water
  • 1/2 cup freshly grated parmesan cheese
  • 1 tsp salt (more if needed)
  • 1/2 tsp pepper (more if needed)

Pasta:

  • 8 oz pasta (e.g., Mafaldine)

Instructions

  1. Boil Pasta: Cook pasta in boiling water until al dente.
  2. Blend Sauce: In a blender, combine fresh herbs, shallot, olive oil, lemon juice, cottage cheese, greek yogurt, salt, pepper, and pasta water. Blend until smooth.
  3. Combine: Heat sauce in a skillet, add cooked noodles, and mix in parmesan cheese. Toss until coated.
  4. Serve: Garnish with more parmesan and enjoy!

Notes

  • If you don’t have a blender, a food processor or immersion blender works too.
  • To adjust sauce consistency, add more pasta water if too thick.
  • Season to taste with salt and pepper.
