Instructions
- Prepare the batter: In a medium bowl, whisk together 2 large eggs, ⅓ cup vanilla unsweetened almond milk, 1 tsp vanilla extract, ½ tsp cinnamon, and ¼ tsp nutmeg (optional) until the mixture is frothy and well combined.
- Heat the skillet: Place a skillet on medium heat and add 1 teaspoon of salted butter or vegan butter, allowing it to melt and coat the pan evenly.
- Dip and cook the bread: Quickly dip one slice of whole-grain bread into the egg mixture, ensuring both sides are fully coated. Place the soaked bread onto the heated skillet. Repeat with another slice of bread.
- Cook until golden brown: Allow the bread slices to cook on the skillet for about 2 to 4 minutes on the first side, until golden brown. Carefully flip each slice and cook until the other side is also golden brown and fully cooked.
- Repeat and serve: Remove cooked slices from the skillet and add remaining butter if needed. Continue dipping and cooking the remaining bread slices in the same way.
