Description

A hearty and protein-packed Cottage Cheese Egg Bake combining savory turkey sausage, creamy cottage cheese, fresh spinach, and juicy cherry tomatoes. This easy-to-make baked dish is perfect for a nutritious breakfast or brunch, offering a delicious way to enjoy eggs with added veggies and flavors.

Ingredients

Sausage

  • 1 lb ground breakfast sausage (turkey sausage recommended)

Egg Mixture

  • 12 eggs
  • 16 oz cottage cheese (~2 cups)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp black pepper
  • Pinch of salt

Vegetables

  • 2 cups chopped spinach
  • 1 cup quartered cherry tomatoes

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the egg mixture evenly.
  2. Cook Sausage: In a skillet over medium heat on the stovetop, cook the ground breakfast sausage, breaking it into crumbles as it browns. Once cooked through, transfer it to a bowl and allow it to cool slightly to avoid cooking the eggs prematurely.
  3. Blend Egg Mixture: In a blender or using an immersion blender, combine the eggs, cottage cheese, garlic powder, onion powder, black pepper, and a pinch of salt. Blend until the mixture is smooth and well combined, ensuring a creamy texture.
  4. Combine Ingredients: Pour the blended egg mixture into a greased or parchment-lined 9×13-inch baking pan. Add the cooked sausage, chopped spinach, and quartered cherry tomatoes. Stir gently but thoroughly to evenly distribute all the ingredients throughout the pan.
  5. Bake: Place the pan in the preheated oven and bake for 40 to 42 minutes. To check doneness, insert a knife or toothpick into the center; it should come out clean when the egg bake is fully cooked.
  6. Cool and Serve: Remove the bake from the oven and let it cool slightly before slicing. Serve warm for a delicious and filling meal.

Notes

  • You can substitute turkey sausage with pork or chicken sausage based on preference.
  • For extra flavor, add shredded cheese on top before baking if desired.
  • Feel free to incorporate other vegetables, such as bell peppers or mushrooms.
  • Ensure the egg bake is fully set before slicing to prevent it from falling apart.
  • Leftovers can be refrigerated for up to 3 days and reheated in the microwave.
