Ingredients
Sweet Potatoes
- 3 medium sweet potatoes, peeled
Butter Mixture
- 1/3 cup unsalted butter, melted
- 1 1/2 teaspoons cinnamon (divided)
- 1/2 teaspoon salt
Syrup & Pecan Topping
- 1/4 cup pure maple syrup
- 4 tablespoons honey
- 1/3 cup chopped pecans
- 1/2 teaspoon nutmeg
- 1 teaspoon fresh thyme, finely chopped
Instructions
- Preheat Oven: Preheat your oven to 400ºF to prepare for roasting the sweet potatoes.
- Prepare Sweet Potatoes: Peel and cut the sweet potatoes into 1/2-inch thick rounds, ensuring even slices for consistent cooking.
- Coat Sweet Potatoes: In a bowl, mix together the melted butter, 1 teaspoon of cinnamon, and salt. Toss the sweet potato rounds in this mixture until they are evenly coated.
- Arrange and Roast: Arrange the coated sweet potato slices in a single layer on a baking sheet, leaving space between each slice to allow browning and prevent steaming. Bake for 25-30 minutes until tender when pierced with a fork.
- Prepare Topping: While the potatoes roast, mix the maple syrup, honey, chopped pecans, remaining 1/2 teaspoon cinnamon, nutmeg, and fresh thyme in a bowl.
- Add Topping and Caramelize: Remove the baking sheet from the oven and top each sweet potato slice with about 1 teaspoon of the pecan and syrup mixture. Return the pan to the oven and bake for another 10 minutes until the edges of the sweet potatoes look well caramelized.
- Serve: Serve the roasted sweet potatoes warm. Optionally, top with feta or goat cheese for added creaminess and flavor.

Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Ensure sweet potato slices are spaced apart on the baking sheet to avoid steaming and to allow proper caramelization.
- For a vegetarian option, omit any optional cheese toppings or choose a vegetarian cheese.
- Use fresh thyme for the best herbal flavor; dried thyme can be substituted at 1 teaspoon but will be less vibrant.
