Ingredients

Sweet Potatoes

  • 3 medium sweet potatoes, peeled

Butter Mixture

  • 1/3 cup unsalted butter, melted
  • 1 1/2 teaspoons cinnamon (divided)
  • 1/2 teaspoon salt

Syrup & Pecan Topping

  • 1/4 cup pure maple syrup
  • 4 tablespoons honey
  • 1/3 cup chopped pecans
  • 1/2 teaspoon nutmeg
  • 1 teaspoon fresh thyme, finely chopped


Instructions

  1. Preheat Oven: Preheat your oven to 400ºF to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel and cut the sweet potatoes into 1/2-inch thick rounds, ensuring even slices for consistent cooking.
  3. Coat Sweet Potatoes: In a bowl, mix together the melted butter, 1 teaspoon of cinnamon, and salt. Toss the sweet potato rounds in this mixture until they are evenly coated.
  4. Arrange and Roast: Arrange the coated sweet potato slices in a single layer on a baking sheet, leaving space between each slice to allow browning and prevent steaming. Bake for 25-30 minutes until tender when pierced with a fork.
  5. Prepare Topping: While the potatoes roast, mix the maple syrup, honey, chopped pecans, remaining 1/2 teaspoon cinnamon, nutmeg, and fresh thyme in a bowl.
  6. Add Topping and Caramelize: Remove the baking sheet from the oven and top each sweet potato slice with about 1 teaspoon of the pecan and syrup mixture. Return the pan to the oven and bake for another 10 minutes until the edges of the sweet potatoes look well caramelized.
