Description

These baked nectarines with cinnamon honey sauce are a simple but luxurious summer dessert, featuring tender, roasted nectarines sweetened with a warm cinnamon-honey glaze. With just four ingredients—ripe nectarines, honey, cinnamon, and vanilla—this recipe comes together quickly, filling your kitchen with a delightful aroma. Serve with a scoop of vanilla ice cream for the perfect finish to any meal.

Ingredients

Fruit

  • 3 nectarines, halved and pitted

Sauce

  • 1/4 cup honey
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract

To Serve

  • Vanilla ice cream (or your favorite ice cream), for serving

Instructions

  1. Prepare the Cinnamon Honey Sauce: In a small bowl, whisk together the honey, cinnamon, and vanilla extract until the mixture is well combined and smooth. Set aside.
  2. Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly spray a baking dish with non-stick cooking spray to prevent sticking.
  3. Arrange the Nectarines: Place the nectarine halves in the prepared baking dish, cut side up. Pour the cinnamon honey sauce over each half, letting some of the sauce fill the centers and drip down the sides. Reserve a little bit of sauce if you want to drizzle more on top after baking.
  4. Bake the Nectarines: Bake in the preheated oven for 25–30 minutes, or until the nectarines are soft and the sauce is bubbling. The fruit should be fork-tender but still hold its shape.
  5. Serve: Plate each baked nectarine half with a scoop of vanilla ice cream. Spoon some of the pan juices or reserved cinnamon honey sauce over the top and serve immediately.

Notes

  • For extra sauce to drizzle, double the honey, cinnamon, and vanilla mixture.
  • This recipe works beautifully with peaches or plums if nectarines aren’t available.
  • Serve warm for the best texture and flavor contrast with the cold ice cream.
  • If you prefer, swap vanilla ice cream for another flavor you love.
